This was another crostini that I made for Christmas this year! So many people enjoyed this as it is sweet, spicy, creamy and crunchy! Lots of wonderful flavor going on with this one, your guests will be sure to love! 🍓

Strawberry, Goat Cheese and Spicy Honey Crostini

Ingredients
  

Crostini

Strawberry Topping

  • 1 Quart Strawberries sliced thin and stemmed
  • 2 Tbsp. Mike's Hot Honey
  • 5.5 oz. Goat Cheese spreadable style
  • 2 tsp. Thyme leaves finely chopped use fresh, not dried

Crostini

  • Pre-heat oven to 320° F
  • Brush bread slices with oil, sprinkle with½ tsp. salt and pepper on both sides and bake for 4-5 minutes, remove bread and rub with garlic top and bottom, bake another 4-5 minutes until golden brown.

Strawberry Topping

  • Spread tops of crostini with goat cheese and layer on strawberry slices (trying to make it look nice) Drizzle with the Spicy honey and sprinkle with Thyme leaves. Refrigerate until ready to serve.

This is one of my Favorite appetizers! 💜 I love Crostini topped with anything! This one I made with a few others this year for Christmas and they were a huge hit! Everyone loved them so much that there was none left!

Smoked Salmon with Dill and Cream Cheese Crostini

Ingredients
  

  • 1 French Baguette sliced into ¼ inch slices on the diagonal
  • 3 Tbsp. Extra Virgin Olive Oil
  • 1 Clove Garlic cut in half
  • 8 oz. Cream Cheese Spreadable Style
  • 2 tsp. Lemon Zest
  • 2 Tbsp. Lemon Juice
  • ¼ Cup Fresh Dill Finely Chopped
  • 1 lb. Smoked Salmon I find it in the meat section of my grocery store
  • 1 tsp. each Salt and Pepper
  • 3 oz. Capers

  • Pre-heat oven to 320° F
  • Brush bread slices with oil, sprinkle with ½ tsp. salt and pepper on both sides and bake 4-6 minutes
  • Remove from oven and while hot, rub with the garlic pieces and bake an additional 4-5 minutes until golden brown.
    Let cool before adding toppings.

Smoked Salmon Topping

  • Mix together cream cheese, lemon zest, lemon juice, dill as well as other ½ tsp. salt and pepper.
  • Spread mixture on top of each crostini piece.
  • Lightly drape pieces of smoked salmon, you don't want to fold it, just lightly layer it so it looks nice. Top with a few capers and a little of the chopped dill. Chill for 1 hour before serving.

  • 4 14.5 oz cans Green Beans Drained and rinsed (can also use fresh)
  • 12 Slices Thick cut bacon Cooked and Crumbled to small pieces
  • 6 Gloves Garlic Minced
  • ½ Cup Butter Melted
  • 1 Large Onion Chopped
  • Cup Light Brown Sugar Packed
  • 1 Tbsp. Worcestershire sauce
  • ½ tsp. Red Pepper Flakes
  • Salt and Pepper to taste

Directions
 

  • Cook bacon until crispy, drain on paper towels. Once cooled enough to touch, crumble into little pieces. Reserve bacon grease.
  • Mix brown sugar, garlic, butter, Worcestershire sauce, and cayenne in a large bowl and mix until combined. Season with salt and pepper to taste.
  • In a large skillet over medium high, sauté onions in the bacon grease until softened and translucent, Season with red pepper flakes.
  • Lightly grease slow cooker and place green beans and onions into it.
  • Pour garlic butter mixture over the green beans, stir until well combined and top with the crumbled bacon.
  • Cover and cook on low for 4-5 hours. Serve hot.

  • Heat the oil and butter in a large skillet over medium heat.
  • Add the onions and cook, stirring occasionally, until translucent and soft, about 5-6 minutes.
  • Add the garlic and cook, stirring occasionally, for 1 minute
  • Add the zucchini, squash, Italian seasoning and a generous pinch of salt.
  • Cook, stirring occasionally, until the zucchini and squash are soft and beginning to brown, about 10-12 minutes.
  • Season with salt and pepper, Enjoy

  • 4 lbs. Yukon Gold Potatoes about 8
  • 1 ½ cups Heavy Whipping Cream https://amzn.to/3bQWrsH
  • 12 tbsp. Butter 1 ½ sticks sliced
  • 2 tsp. Salt
  • 1 tsp Black Pepper

  • Cut potatoes into about 1/4 inch slices, place in colander and run under cold water about 30-60 seconds, moving around to make sure all slices are getting wet.
  • Transfer potatoes to a medium Dutch oven, add cold water to cover by about 1 inch, bring to a boil then reduce heat to medium and simmer for about 20-25 mintues until potatoes are tender.
  • While potatoes are simmering, heat the heavy cream and butter in a small sauce pan over medium heat until the butter is fully melted about 5-6 minutes, take off heat and put a lid on to keep warm.
  • Drain the potatoes and return to the Dutch oven, stir over low heat until the potatoes are dry and there is no more water seen on them. about 2 minutes. Set a ricer over a large bowl and press the potatoes a little at a time through the ricer.
  • Mix in the butter and heavy cream mixture into the potatoes with spatula, add salt and pepper.

  • 1 Poblano Pepper Roasted and Peeled
  • 1 Red Bell Pepper Chopped
  • 1 Yellow Bell Pepper Chopped

  • Roast corn on the cob on grill or in a small skillet over medium heat until roasted slightly.
  • Roast and peel poblano pepper then dice roughly
  • Cut the corn off the cob ( I place corn on a small bowl upside down, inside a bigger bowl)
  • chop bell peppers roughly into small pieces.
  • Add all ingredients into small sauce pan over medium heat until heated through, salt and pepper to taste.
