Jenn’s Summer Lemon Pie

  • Food processor
  • Medium Mixing bowl
  • Pie Pan

Lemon Filling

  • 1 cup Lemon Juice
  • 4 Large Egg Yolks
  • 1 14 oz can Sweetened Condensed Milk
  • Lemon Zest
  • Cool Whip ((or homemade whipped cream))

Cracker Crust

  • 2½ cups crackers ((i used oyster style))
  • 3 Tbsp. Sugar
  • 1 stick Butter (Melted)
  • 2 Tbsp. Lemon Zest
  1. Preheat oven to 350° F

Cracker Crust

  1. Add crackers and sugar to the food processor and pulse, add melted butter and lemon zest continue to pulse about 30-60 seconds

  2. Press the cracker mixture into the bottom and up the sides of a pie pan (9 to 10 inch ) Chill for 1 hour.

  3. Bake the crust until the edges start to turn golden about 15-20 minutes. Allow to cook on cooling rack for 30 minutes.

Lemon Filling

  1. In a bowl combine condensed milk, and egg yolks until completly combined. Add in the lemon juice and whisk for another 2-3 minutes. Pour mixture into the prepared pie shell and bak until the filling has almost set in the center around 20-25 minutes.

  2. Cool to room tempature on a cooling rack, then refrigerate for 3-4 hours. Top with cool whip or whpped cream.

Mexican Fruit Salad

  • Large Mixing bowl
  • 2 Mangos (Diced)
  • 1 Jicama (Diced)
  • 1 Cucumber (Peeld and diced)
  • ½ bunch Cilantro (Chopped)
  • ¼ cup Red Onion (Diced)
  • 1 tsp. olive oil
  • 2 Limes (zested and juiced)
  • ½ tsp. Salt
  • 1 tsp. Chili para naranja
  • 1 Jalapeños (Diced)
  1. Add all ingredents to a large mixing bowl and refrigerate 30 minutes before serving

Strawberry, goat cheese and spicy honey crostini

This was another crostini that I made for Christmas this year! So many people enjoyed this as it is sweet, spicy, creamy and crunchy! Lots of wonderful flavor going on with this one, your guests will be sure to love! 🍓

Strawberry, Goat Cheese and Spicy Honey Crostini

Crostini

  • 1 French Baguette (Sliced on a diagonal about 30 pieces)
  • 3 Tbsp. Extra Virgin Olive Oil
  • 1 Clove Garlic (cut in half)
  • 1 tsp Salt and Pepper

Strawberry Topping

  • 1 Quart Strawberries (sliced thin and stemmed)
  • 2 Tbsp. Mike's Hot Honey ()
  • 5.5 oz. Goat Cheese (spreadable style)
  • 2 tsp. Thyme leaves finely chopped (use fresh, not dried)

Crostini

  1. Pre-heat oven to 320° F

  2. Brush bread slices with oil, sprinkle with½ tsp. salt and pepper on both sides and bake for 4-5 minutes, remove bread and rub with garlic top and bottom, bake another 4-5 minutes until golden brown.

Strawberry Topping

  1. Spread tops of crostini with goat cheese and layer on strawberry slices (trying to make it look nice) Drizzle with the Spicy honey and sprinkle with Thyme leaves. Refrigerate until ready to serve.
